Thai Fried Garlic – Gratium Jeow- กระเทียมเจียว

Thai fried garlic – gratuim jeow is an integral ingredient in any Thai noodle or rice soup. It adds a great flavour and crunch. I’m using Thai garlic that you don’t have to peel, but if you’re using regular garlic make sure to peel in first.

  1. Roughly pound your garlic in a pestle and mortar (you don't want a paste) or finely chop with a knife or in a food processor.
  2. Place the garlic and oil in a cold pan and bring to a medium-low heat.
  3. Fry, stirring all the time until the garlic starts to turn golden - around 3-4 minutes then take off the heat. You want to take it off before you think it's ready, the residual heat in the pan will continue to cook the garlic. If it burns it will be really bitter!
  4. Transfer to a bowl to use right away, or store in jars.
